Meatballs
Meatballs
2 Eggs
2 lbs hamburger
1 C dry bread crumbs
1/2 C onion chopped
1 clove garlic, pressed
salt
pepper
combine all ingredients and form into 1-1 1/2" balls. (roughly 30 meatballs)
Bake at 400 for 20 minutes or until no longer pink
Sweet and Sour Meatballs
1 can (20 oz) pineapple chunks
1/3 C water
3 T vinegar
1 T soy sauce
1/2 C packed brown sugar
3 T cornstarch
1 batch meatballs (about 30)
1 large green pepper cut into 1" pieces
Drain pineapple, reserving juice. Set pineapple aside. Add water to juice if needed to measure 1 cup; pour into large skillet. Add 1/3 C water, vinegar, soy sauce, brown sugar and corn starch; stir until smooth. Cook over medium heat until thick, stirring constantly. (it will go from a foggy brown to a deep caramel brown)
Add pineapple, meatballs and green peppers. Simmer uncovered for 10 minutes until heated through. Serve over rice.
