Here are a few of our favorites.
Snickerdoodles
1 cup butter
1 cup sugar
2 eggs
2 3/4 cups flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 tsp vanilla
2 Tbsp cinnamon
Cream butter and sugar, add eggs. Add dry ingredients (except sugar and cinnamon). Chill dough several hours. Form 1 inch balls, roll in cinnamon and sugar. (Don't flatten). Bake at 350 degrees for 9 to 10 minutes, for a crisp cookie. (7-8 for softer cookies).
1/2 cup butter
1 1/2 sugar
1 1/2 brown sugar
3 eggs
1 1/2 tsp soda
3/4 tsp salt
1 tsp vanilla
3 cups rolled oats
3 cups flour
1 1/2 cup peanut butter
Mix well first 7 ingredients. Then add the next 3 . Spread in pan (about 18" x 26") and bake for 10 minutes at 325 degrees. It will be barely brown. Remove from oven and quickly sprinkle 16 oz. chocolate chips on top. As they melt, spread evenly over top. When cooled, frost with peanut butter frosting
Frosting
1/4 cup peanut butter
powdered sugar
evaporated milk
Frosting: Add sugar and milk to the peanut butter to make an easily spreadable frosting.
**Another way to top these is to cool 5 minutes, then spread with peanut butter, cool 1 hour and frost with chocolate frosting.
