Broccoli Cheddar Pie and Cheese Dip

Recipes using the items from the Emergency Essentials Group Specials for June.  Thanks Patty!
Broccoli Cheddar Pie Bake
2 1/2 cups broccoli dices
3 cups Shredded Cheddar Cheese divided
2/3 chopped onion
3 Eggs
1 1/3 cup milk
3/4 cup Bisquick Mix
1/2 tsp. salt
1/4 tsp pepper
1.  In a large bowl, combine broccoli, 2 cups cheese and onion
2.  In another bowl, combine eggs, milk, biscuit mix,salt and pepper, mix well.
3.  Pour over broccoli mixture, toss gently
4.  Pour into two greased 9 in. pie plates
5. Bake at 400 degrees for 35-40 minutes or until a knife inserted near the
center comes out clean
6.  Sprinkle with remaining cheese, return to the oven
for 12 minutes or until melted.  Let stand 5-10 mins. before cutting.
Cheese Dip Variations
1 cup chopped white onion
2 cups mayonnaise
3 cups shredded cheddar cheese
Mix all ingredients together and bake at 350 degrees for 30 minutes
Serve with bread, crackers, chips, or vegetables.
Variations:
Add Refried Beans, sour cream and salsa for a Mexican dip
Add Broccoli Dices and other vegetables for a cheesy vegetable dip
