Sausage and Wheat Berry Casserole


2 1/2 cups cooked wheat berries (see below)
1/2 lb. pork sausage or 1 pkg bacon
1 medium onion, chopped
1/2 cup green peppers OR 1/4 cup dehydrated peppers + 1/2 cup hot water
1 tsp seasoned salt
Black pepper to taste
1/2 tsp. garlic salt
1/2 tsp. Italian seasoning
1 - 16 oz. can diced tomatoes
1 cup tomato juice
1 cup mild cheddar cheese

Brown sausage in a large skillet. Add onions and peppers. Cook over medium-low heat
until tender. Stir in all the seasonings, tomatoes and tomato juice. Simmer another
5 minutes. Stir in cooked wheat. Cover and simmer 15 minutes until wheat is hot.
Sprinkle top with cheese before serving. Serves 6
Note: You may also stir in 1 -2 cups cooked rice for a variation

 
Directions for Wheat Berries
Bring water to boil, add wheat. Boil for approx. 30 mins.
until some kernels begin to split.
