Yummy Granola
5 cups old fashioned oats
1 cup raisins
1 cup chopped pecans
1/2 cup chopped cashews
1/4 cup flax seed
1/2 cup sunflower seeds
3/4 cup brown sugar
3/4 cup margarine or butter, melted
1/2 cup honey
1/3 cup oil
1 tsp cinnamon
1 tsp vanilla
Combine all ingredients in a large bowl and mix well. Spread onto solid dehydrator sheets and dry for 3 to 5 hours or until crunchy. Store in an air-tight container.
Some notes: You can also add 1/2 cup wheat germ or different dried fruits or nuts. You might want to omit the flax seeds if you wear dentures. I used vegetable oil, but I have used peanut oil before. This is so good, quite a bit didn't make if out of the dehydrator. I do have to say that I left mine in around 8 hours, but my dehydrator is more than 20 years old so newer ones may work faster. I think I will try this with less oil / butter next time too, so that it's a bit healthier.
I think I'll go have a bowl right now . . .
