Got Peppers? Years ago I got this recipe from a co-worker, I love it, although I admit to reducing the amount of Serrano peppers (A LOT), it has such a fresh garden taste. We like it with chips but I think it would be yummy on enchiladas or taco too. I hope you enjoy it.
2 lbs. Tomatillos | 1 med. onion, diced | |
1/2 to 1 lb. Serrano peppers | 14 cloves garlic (I use the bottled) | |
2 – 3 qt. Water | 1 tsp. black pepper | |
4 Tbsp. salt | 1/2 tsp. ground cumin | |
3/4 cup vinegar | 1 Tbsp. ground oregano | |
Boil, Tomatillo, Serrano and water mixture until the peppers are limp. Mix garlic, onion, pepper, cumin and oregano. Combine all ingredients in a blender. Blend until the sauce is smooth. Store in the refrigerator. | ||
