Green Souce HOT!

Got Peppers?  Years ago I got this recipe from a co-worker, I love it, although I admit to reducing the amount of Serrano peppers (A LOT), it has such a fresh garden taste.  We like it with chips but I think it would be yummy on enchiladas or taco too.  I hope you enjoy it.

2 lbs. Tomatillos 1 med. onion, diced

1/2 to 1 lb. Serrano peppers 14 cloves garlic (I use the bottled)

2 – 3 qt. Water 1 tsp. black pepper

4 Tbsp. salt 1/2 tsp. ground cumin

3/4 cup vinegar 1 Tbsp. ground oregano

Boil, Tomatillo, Serrano and water mixture until the peppers are limp. Mix garlic, onion, pepper, cumin and oregano. Combine all ingredients in a blender. Blend until the sauce is smooth. Store in the refrigerator.
