Taco Soup

A recipe from a very busy mom, Sheri said she makes this recipe in bulk and freezes the extra in Ziploc baggies.

 . . .and here's the thing I like.  Her kids will eat it!

Taco Soup

1 lb. ground beef
1/4 cup chopped onion
2 cups fresh or frozen corn
1 can (15.5 oz) kidney beans, rinsed and drained
1 can (14.5 oz) diced tomatoes, drained
1 can (8 oz) tomato sauce
1 envelope (1 1/4 oz) taco seasoning
corn chips, shredded cheddar cheese and/or sour cream, optional

In a large saucepan, brown ground beef and onion, drain.  Add corn, kidney beans, tomatoes, tomato sauce and taco seasoning.  Cover and simmer for 15 minutes, stirring occasionally.  Serve with corn chips, cheese and or sour cream if desired.  Yield 4-6 servings  (1 1/2 quarts)
