Banana Bread with yogurt and oil

I just thought I'd share our new favorite banana bread recipe.


Banana Bread with yogurt and oil

4 eggs
2/3 cup buttermilk or yogurt (we use vanilla & leave out the vanilla extract)
2/3 cup vegetable oil
2 cups mashed bananas (3 or 4)
2 cups sugar (the original recipe calls for 3 cups but we cut it to 2 
using vanilla yogurt instead of plain)
3 1/2 cups flour
2 tsp baking soda
1 tsp salt
2 tsp cinnamon
1 tsp vanilla
*opt. 3/4 cup chocolate chips and / or chopped nuts

Bake at 325F for 80 minutes.  Makes 2 medium sized loaves
