Garlic Lime Chicken

Another "food storage" meal.  I hope you are seeing a pattern here.  A food storage meal is anything you can make without going to the store (ideally something you could make without going to the store for a few weeks or even months).  This is a favorite recipe of mine it comes from Karen at 365 days of Slow Cooking (a local celebrity).

Garlic Lime Chicken


5  skinless chicken thighs
      (you can use breasts but they will cook faster and be could be more dry, 1/2 breast = 1 thigh)
1/2 cup soy sauce
1/4 cup lime juice
1 Tbsp. Worcestershire sauce
2 garlic clover or 1 tsp. garlic powder (I used canned diced garlic about 1/2 tsp for 2 cloves).
1/2 tsp dry mustard
1/2 tsp pepper
1 Tbsp. quick cooking Tapioca

Mix all the ingredients together in your slow cooker** and cook on low for 4 to 6 hours.

**Anytime you are making a slow cooker recipe for the first time, especially chicken, you should keep an eye on it to make sure it doesn't dry out.  That said I think if you are cooking other meats longer (on low) is usually better and taking the lid off to check things can really slow down your cooking.
