Zucchini Lasagna

Here's another tip for using up your extra lasagna (ZUCCHINI - this is why you shouldn't blog while in a hurry)and it's pretty easy!

Lightly brown zucchini slices in a skillet with olive oil, and use the zucchini in place of all or part of your lasagna noodles, while you're layering your lasagna.

Healthy too.
