"Bottle of" Fruit Cake & Cream Cheese Frosting

YIPPEE - We have our first non solicited post  - I'm so excited - not to mention it sounds really yummy.  THANK YOU Cecilia from the Fairgrove ward!

1 quart fruit or 4 cups with juice ( I use peaches)
Blend in blender until smooth

Mix together in separate bowl

4 cups flour ( I use 2 cups white and 2 cups wheat flour)
4 tsp. cinnamon
1 tsp. cloves
1 tsp. salt
2 C. sugar
2 tsp. nutmeg
1/2 tsp. ginger

To blended fruit add 4 tsp soda and 1 tsp. vanilla( just prior to mixing with dry ingredients)
Mix fruit and dry ingredients together, then mix in 1 cup of oil*.

Optional:
Can add Chocolate Chips, Raisins or Nuts if desired

Bake in a greased 9x13 pan at 325 for one hour.

* I use white beans as a substitute for oil. ( one cup of water mixed with one cup of dry white beans ground up into flour) It's a great way to cut out some fat and use your beans! Not to mention the added protein! I hope this makes sense!

I like to frost it with Cream cheese frosting. Here's the recipe

Best Cream Cheese Frosting:

4 oz. cream cheese
1/2 C butter
2 C powdered sugar
1 tsp. vanilla
