Slow Cooker Creamy Chicken Fajita Soup

The Foxglen Park recently held and Super Saturday.  The lunch was soup and bread sticks.  They've graciously agreed to share some recipes.  I'll be adding them as I get them.

Slow Cooker Creamy Chicken Fajita Soup
1 lb boneless, skinless chicken breasts (I use 2 breasts and throw them into the crockpot frozen - can't get any easier)
2 cans cream of chicken soup
1 cup salsa
2 cups frozen corn
1 (15 oz) can black beans, rinsed and drained
1 1/2 cups water
1 tsp cumin
1 cup cheddar cheese, shredded
favorite toppings

Spray slow cooker with non-stick cooking spray.  Place chicken into slow cooker.  In a bowl, mix together cream of chicken soup, salsa, corn, black beans, water, and cumin.  Pour over chicken in the slow cooker.  Cook on low 4-6 hours (or high 2-3 hours).  Remove chicken and shred using 2 forks.  Put chicken back into slow cooker, add cheese, and let cook for 15 more minutes.  Serve with your favorite toppings (shredded cheese, sour cream, crushed tortilla strips, tomato, etc).

Sept 2014 - Recipes, Cranberry Chicken and Earthquake cake

Have you ever been to a recipe exchange?
Have you ever been to one where you actually took a recipe and a dish and came home with great ideas?

It seems like we are asked to bring recipes and treats all of the time especially for church activities but it doesn't seem to actually happen as often as I would like.

I did go to one once that I really loved though, it was at my sweet neighbors house and people brought the recipe and a sample.  Some of my favorite recipes come from that night, so in case she ever reads this  . . . THANKS NIKKI

Here's one from Lorena F, from the Regal Country Ward.

Cranberry Chicken
6-8 chicken breasts or 12-14 chicken tenders
1 bottle of French salad dressing (16 oz.)
1 package dry onion soup mix
1 can whole berry cranberry sauce (16 oz)
Mix dressing, cranberries and soup mix, pour over chicken.  Bake at 350 degrees F for 30-45 minutes if chicken is thawed, 1 hour to 1 hour and 15 minutes if it is frozen.  Serve over rice.

Earthquake Cake
1 German Choc cake mix & all ingredients               1 cup choc chips
1 cup coconut                                                              1 cup nuts, chopped (I use pecans)
1 pkg cream cheese, softened                                    ¼ cup butter, melted
2 ½ cups powdered sugar

Mix choc chips, coconut and nuts and put greased 9 x 13 cake pan.  Mix up cake mix and pour onto first layer.  Mix softened cream cheese, melted butter and powdered sugar.  Pour across the top of the cake and bake as directed.

Feb 2014 - Recipe - Delicious Chicken Tortilla Soup Recipe

This recipe comes from Patty's daughter-in-law and is one of my favorite food storage recipes.  It's quick and easy and perfect for a cool evening.  In fact I think I'll make some right now!
My trial - this was delicious, I think I could eat it everyday!


Chicken Tortilla Recipe

2 cups bouillon (or 2 cups water)
1 cup salsa (you can change the flavor of the soup by using different flavors of salsa - I used mango salsa)
1 cup canned chicken
1 can canned black beans
1 can corn
1 tsp garlic powder
1 tsp cumin
1 tsp chili powder
2 tbsp chopped cilantro

Put all ingredients in a a pot.  Cook for 20-25 minutes.  Serve with grated cheese, tortilla chips, quesadillas, sour cream . . .

I didn't drain the corn or beans because I like to have the juice in it.

Marinated Grilled Chicken for the Freezer

Here's another good idea for you if you took advantage of the Kent's sale on chicken . . . Thanks Patty W. for the great idea.

You marinate 10 lbs. of chicken overnight and grill them the next day.  I then place them in zip loc freezer bags for easy removal or for longer storage, vacuum seal them.
Marinated Chicken Breasts
1 pint Wesson oil (I tried olive oil--doesn't work, use a vegetable oil)
1 qt. 7-up
1 pint soy sauce
1 T. horseradish sauce
1 T. garlic powder
Trim chicken and cut in half if large breasts.  Marinate 24 hrs.  Get your husband to do the grilling if you can. 
This already cooked chicken is soooo easy to take out of a bag, thaw or microwave for a couple of minutes, and serve with a side of vegetables and or salad.  It truly has quite a long shelf life especially if vacuum sealed.  My whole family likes this chicken especially the men and this makes a really easy dinner.  (It does look kinda of ugly in the bags, but great on a dinner plate.)

Chicken Canning, Freezing, Slow Cooking

Just a quick post for you locals - Kent's has 40 lbs of chicken for $50, making it $1.25 a pound.  I haven't seen it that low in awhile.

Yesterday I prepared 80 lbs of chicken.

Freezer meals:

Hawaiian - I can't remember where the recipe came from but it's super easy and we love it.

Hawaiian Chicken
3 1/2 chicken breasts
1/2 cup white vinegar
3 cloves garlic, minced
2 Tbsp soy sauce
1 cup large pineapple chunks (I used tidbits - large can from Sam's) so they will probably disappear in the slow cooker)
1 cup pineapple juice (I tried it with OJ this time too, we'll see how that goes.)

Low 6-7 hours

Orange Honey Teriyaki - recipe from the Yoshida's Original Gourmet Sweet and Savory sauce you buy at Costco.
It's 1 cup sauce, 1 cup orange juice, 1/2 cup honey.  (There was a lot of sauce left over, nice for over your rice but it is a little sweet so be warned).

Italian - From Over the Blue Moon

I also trimmed and froze two cookie sheets of tenders and then transferred them into freezer bags.

Canned:
I pressure canned two batches using my new Tattler lids.  I learned a few things:

  • Don't over tighten the lids, they need to be 1/4 in loose to vent.
  • Tighten when you take them out  - they are really HOT, use a couple of rags.
  • DON'T HURRY - three of my pints didn't seal and were RUINED because when we slapped the lid on the rubber seal slipped into the jar and then that rubber cooked with the chicken - yum - NOT!! -resulting in really sour chicken that had me worried that I had just prepared 80 lbs of bad chicken.
Slow Cooker:
Orange Honey Teriyaki - with rice, not a bad dinner.

I still have once bowl left, I'm thinking General Tso's chicken!

Chicken Corn Chowder

Here's a yummy recipe for you using something from Kent's Market pre-caselot sale.

Creamed corn - 49 cents a can

Chicken Corn Chowder
  • 4 tablespoons butter 
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 4 Tbsp.  flour
  • 6 cups milk
  • 4 cups chopped chicken breasts (about 2 breast halves) 
  • 3 cups fresh or frozen corn kernels (about 3 ears)
  • 1/2teaspoon pepper
  • 1/4 teaspoon salt
  • 2 (14 3/4-ounce) cans cream-style corn 

Saute the onions and celery in the butter, stirring often for about 3 minutes.  Add flour, cook 1 minute stirring constantly.  Stir in milk and remaining ingredients.  Bring to a boil to thicken (about 5 minutes).

makes about 12 cups of chowder.

Robyn’s Chicken Noodle Soup


1 Whole Chicken
Minced Onion or dehydrated onion 1 Tbs
Or 1 small onion finely chopped
Seasoning salt 2 tsp
Garlic Pepper (or black pepper) 2 tsp
3 Chicken bouillon cubes
Fill a large pot ½ way with water. Add all the above ingredients.
Bring to a boil then reduce to simmer. Cook for 1 hour.
Keep an eye on water level.
Remove chicken, let cool on a platter.
I scoop off the “fat” that is at the top of the water. To the broth
Add sliced up carrots, I use dehydrated carrots. My family doesn’t like celery so I add
1 tablespoon of either parsley or chives.
I like to add 2 more bouillon cubes. Boil for about 10 minutes if using
Dehydrated carrots, 20 if using thinly slices fresh carrots.
De bone chicken and shred into fine pieces. Can sprinkle
Some seasoning salt over top of it.

When carrots are done, add 2 packages of Kluski Noodles:
These noodles are sold at Winegars, Kents. They taste just
Like homemade noodles and have the least amount of
Additives to them. You will need to add more water to allow noodles
To cook properly. Once noodles are cooked, if there is too much liquid,
Scoop out some of the liquid (I save this and add it to dog’s food).
Turn heat down to low.
Add 1 family size can of Campbell's Cream of Chicken Soup
And then fill can ¾ the way full with milk and add.
Stir well, breaking up the cream of chicken. Add chicken pieces
On all the seasonings, play around with it and season to your taste.
My family prefers soup to be thick, but you cook it again to your preference.

Chicken Spaghetti



With only four ingredients this would be perfect for a quick dinner.  Freeze ahead grated cheese and cooked cubed chicken to make it even easier.
2 cups cooked spaghetti noodles (broken up)



1 can cream of chicken soup or chicken broth
1 cup cheddar cheese, grated
2 boneless, skinless chicken breast cooked and cubed
Mix together soup, broth & cheese until cheese is melted and sauce is warm. Then add noodles and chicken. Mix together & enjoy.


Simple enough that even picky eaters will enjoy it.

As an added twist try adding steamed broccoli or cauliflower as a side or mixed right into the noodles
We just need to add a salad and it's ready to eat.

Turkey or Chicken Tetrazini

8 oz. spaghetti broken in 2 inch pieces (2 ½ cups dry)
4 oz. can sliced mushrooms
4 Tbsp. Butter
1 can cream of chicken soup
2 cups cubed turkey or chicken
1/4 cup parmesan cheese
3 Tbls. Chopped onion
1/2 tsp. celery salt
1/2 tsp. marjoram
2 Tbls. Pimento
1 tall can evaporated milk
Y2 Cup shredded cheddar cheese
Directions:
Cook spaghetti until tender. Saute onions in butter, add seasonings and mushroom liquid then blend in soup until smooth. Gradually add canned milk and stir until smooth and heated through. In a buttered 13x9 pan mix spaghetti, mushrooms, pimento and turkey, or chicken. Pour sauce over, mix thoroughly. Top with cheeses. Bake at 350 degrees for 30 minutes.

Food Storage Mexican Chicken Chowder

1 can cream of chicken soup
1 can chicken broth
1 c. water
2 Tbsp. taco seasoning or chicken taco seasoning
1 large can of chicken
1 small can of chicken
1 can corn
1 can black beans
1 can diced tomatoes
1 can chopped green chilies
2 Tbsp. minced dried onions
1 tsp. chili powder
1 tsp. cumin

Mix all ingredients in a crock pot and cook on low for 5-6 hours or high for 3-4 hours. Just before serving you can mix in sour cream, chopped green onions or cilantro and serve with tortilla chips. Fresh ingredients can be substituted for all the ingredients. This is a great soup to use up food storage items.

Ceasar Pasta Salad

1 (8 oz) box Penne Pasta, cooked, drained
1 bag Hearts Of Romaine lettuce (Spinach is great too!)
2 green onions, washed, sliced
1 cup cherry tomatoes, washed
Feta cheese to taste
Grilled chicken, cut into strips or bite size pieces
Brianna's Asiago Ceasar dressing, to coat

Mix all the ingredients in a bowl. Add dressing just before serving. This is a terrific side dish, but also filling enough to be a light meal.
