Beef Brisket Stew with Cauliflower
2 cups Beef Brisket* (Freeze dried from Emergency Essentials)
1 cup Onion, chopped*
1 cup Celery, chopped*
2 cups Potato, diced*
1 cup Cauliflower*
2 cloves garlic, minced
2 bay leaves
2 cups Beef Broth*
1 1/4 cup Water
2 Tbsp Olive Oil
salt and pepper
Saute onion in a large pot (in olive oil) until soft and somewhat translucent. Add garlic and let brown for a few minutes.
Add meat, carrots, celery, potatoes, bay leaves, salt and pepper. Let cook for 10 minutes. Add beef broth and 1 cup water. Bring up to a boil and then lower to med-low heat.
Cover, and let simmer for 15 minutes. Add 2 tsp flour to 1/4 cup warm water and mix well. Pour into stew while stirring. This will help thicken the sauce.
Simmer uncovered for 5 minutes or until sauce thickens. Remove bay leaves. Season with salt and pepper to taste.

Baked Ziti
| 1 lb. dry Ziti pasta | 6 ounces provolone cheese, sliced | |
| 1 onion, chopped | 1 1/2 cups sour cream | |
| 1 lb. lean ground beef | 6 ounces mozzarella cheese, shredded | |
| 2 (26 oz.) jars spaghetti sauce | 2 tablespoons grated Parmesan cheese | |
| Bring a large pot of lightly salted water to a boil. Add Ziti pasta, and cook until al dente, about 8 minutes; drain. In a large skillet, brown onion and ground beef over medium heat. Add spaghetti sauce, and simmer 15 minutes. Preheat the oven to 350 degrees. Butter a 9x13" baking dish. Layer as follows: 1/2 the Ziti, Provolone cheese, sour cream, 1/2 sauce mixture, remaining Ziti, mozzarella cheese and remaining sauce mixture. Top with grated Parmesan cheese. Bake for 30 minutes in the preheated oven, or until cheeses are melted. | ||
